Sixlets Cake for a Blog Birthday, and a Giveaway!


One year ago I was baking up a scratch-made confetti cake for this blog's first birthday.  Not only was it fun to make - in a fling-sprinkles-everywhere kind of way - it was incredibly well received.  Many of you made your own version and sent me pictures of the happiest faces behind lit candles, which makes me more than a little teary as I type this. Words can't express how special those emails are.  They are a gift to me.

Here we are at year two!  I wanted this year's cake to be just as special and sprinkle-filled as the last, but I wasn't exactly sure how to go about doing that - until I discovered Sixlets.

Have you heard of Sixlets?  They're like sprinkles, only bigger, and instead of solid candy they are a mixture of chocolate and carob wrapped in a candy shell.  A little like M&M candies but different, round.  They are sold by the pound in solid colors, metallics and color assortments.  I'm tellin' you,  it's a sprinkle lover's dream come true!  I stacked them high to the tippy-top of this cake for ultimate sprinkle-coverage!


The inside of the cake holds a birthday-blue sprinkle swirl, just like my favorite birthday cake ice cream.

This recipe makes a lot of cake batter - about 14 cups, and you'll need a stand mixer to make it...


...so I'm giving one away!

Here's a few more details about the cake. 
If you've been sticking around here for a while, then you know I love a good scratch-made cake, so you may be surprised to know that this cake is not completely scratch-made.  It's Rebecca Sutterby's famous White Almond Sour Cream cake (WASC, as it has come to be known) - and it's the absolute best cake for creating beautiful consistent color.  I knew my blue swirl would really stand out in this batter!  It's also a great choice for a pristine white wedding cake sans food coloring.  It is moist, delicious and feeds a crowd!

The Sprinkle Bakes Sixlets Cake
Cake portion adapted from Rebecca Sutterby's WASC                                               [click for printable version]

Cake:
2 boxes white cake mix
2 cups all-purpose flour
2 cups granulated sugar
1 ½ tsp salt
2 2/3 cups water
1/4 cup vegetable oil
2 tsp real vanilla
2 tsp almond extract
2 cups (16 oz) sour cream
8 large egg whites 
½ tsp Wilton sky blue food coloring
¾ cup multicolored jimmies (the kind you find in the ice cream section of the grocery store will hold up well in the batter)
2 lbs. Sixlets candies
Various and sundry sprinkles of your choosing for the top of the cake
  1. Preheat oven to 325 degrees. 
  2. Grease five 7-inch cake pans and line with parchment.  You may also choose to use four 9” cake pans.
  3. Place all dry ingredients in a large mixing bowl and stir together with a wire whisk. Add the remaining ingredients and beat on a low speed for 2 minutes until smooth. 
  4. Remove 6 cups of batter and tint with the sky blue food coloring.  Add the multicolored jimmies to the blue batter and fold gently to combine. 
  5. Pour batter in pans, alternating blue and white batters.  Pull a knife or skewer through the batter to create a swirl.  Bake cakes for 40 -50 minutes, or until cake springs back when pressed in the middle.
Icing:
8 egg whites
1 cup sugar
Pinch of salt
32 tbsp. (1 lb. or 4 US sticks) unsalted butter, cubed
2 tsp. clear vanilla extract

  1. Set a saucepan filled 1/3 full of water over medium high heat and bring to a simmer.
  2. Whisk together egg whites, sugar and salt in a heat-proof bowl.  Set over simmering water and whisk until mixture is hot and sugar has dissolved.
  3. Transfer to the bowl of a stand mixer fitted with the whisk attachment.
  4. Beat on low speed for 2 minutes, then increasing to medium-high until stiff peaks are formed.
  5. Continue beating at medium-high speed until mixture is fluffy and has cooled.
  6. Remove whisk attachment and replace with paddle attachment
  7. Decrease mixer speed and add butter, a little at a time, beating until well incorporated before the next addition.
  8. Add vanilla extract.
  9. Beat until icing is smooth.  Increase speed if icing is slow to firm.

Assembly
  1. Ice cakes and stack them, making sure the edges are as even as possible.  Apply an even coating of icing to the outside of the stacked cakes using an off-set spatula, filling any gaps and crevices.
  2. Starting at the bottom of the cake, gently push sixlets into the icing. Create a line of alternating colors (or use a solid color, your choice!)  To achieve the graduated swirl, use colors in the same order on the second line, but move the first color over one space to the right.  Continue this pattern all the way up the cake.  By the time you’re done, (about  1 hour 20 minutes) you’ll be in a hypnotic state from applying sixlets sprinkles.  This process is very meditative – enjoy the zen!
  3. Sprinkle the top of the cake with various and sundry.  Add a sparkler if you’re into pyrotechnics…which I certainly am!

I get to go first! I've had 51 birthdays and a good many of them I don't really remember. But I remember this year's birthday. I took myself to a small town in Mexico and drank Margaritas. I went with my 18 year old so she could try surfing. She is spending a year finding herself and so far hasn't had much luck. We both needed to go far away and forget life's serious business for a week. I always wanted a pony or a horse for my birthday so on my actual birth day, my daughter insisted we go horseback riding on the beach and up the hill to the lookout. We went on these hot skinny horses and got eaten alive by mosquitos but it was memorable.

I slept with her next to me almost every night for 22 years (until her place was usurped by my pregnancy pillow!), and still keep her next to my bed. I didn't have many friends at the time so that guitar became my best friend. When I turned 18, she did the same thing, but bought me the guitar I had been saving all my money for. Yay, happy bloggiversary to you! The cake looks spectacular. I subscribe on bloglovin', hope that counts! It's difficult to choose a best birthday present, but I guess it would be a couple years ago: my lovely boyfriend gave me this bag full of chocolates and beautifully bound books and several slices of different cakes and sweet things he'd baked himself (he's a wonderful baker). My favorite birthday gift was getting to see my fiancé for my 21st birthday - we were long-distance and he had a heavy work schedule, but he took an entire weekend off from his job in production just to spend that day with me. This year my husband gave me a new camera...the Nikon d5000. I got it a tad early, about 2 months early. He told me that I needed time to learn how to use it because he was taking me to London with him, right before my actual birthday, on a business trip for 2 WEEKS! I love this camera and had originally named it Ashton Kutcher (he's the spokesman for the company)...but that was too long. Sixlets are the forgotten treat of the candy world and one of my personal all time favorite candies... Friends of mine always buy them for me when they see them in roadside gas stations, or on dusty counters. You could be the rise of the sixlet popularity again!!!!

If I were to tell you about my favorite birthday presents, I would have to say at the top of my list would by my puppy, Guinness. One year ago, for my 25th birthday, we adopted him as a rescue from a puppy mill just as he turned 10 weeks old. He is our first "baby" and my first pet. I never realized I could love something so furry so much. He greets me at the door on my worst days, he snuggles with me every night, and he is my biggest fan in the kitchen. I will be looking forward to many more birthdays with my boys near my side.

I just subscribed via my google reader. Happy blog birthday!! My best birthday present ever was last year and it wasn't the present, it was the cake! My hubby went out in a major snowstorm (my bday is in January) to get get the best cake ever from a local bakery. It's called a bump cake...it has several layers of vanilla cake layered with chocolate buttercream and has extra "bumps" of the buttercream on the top and then it's finished off with a chocolate ganache....heaven!!

This is the first blog I've followed but I've Stumbled Upon it so many times I decided to subscribe. The first thing when I saw this cake was, "Good Lord that's big... I have to make it!" I love how the sixlets swirl around the cake. Anyways, my best birthday present was probably the charm bracelet I got in high school from my boyfriend at the time. I was only a freshman and he was my first boyfriend and he did such a good job picking out the perfect charms. Every time I look at it I'm reminded of my first love and since we remained friends after we broke up, it doesn't have any negative sentiments associated with it. Absolutely fabulous cake, the recipes sound super good too! Definitely need to try this on one of my next birthday celebrations! My favorite birthday present?! Getting to celebrate every birthday for the last 14 years (and for all the rest of my days) with my fantastic hubby! :) Hubby and I are 14mins shy of being EXACTLY (to the minute) 5 years apart.... our birthdays are August 23rd :)

I have to post about my 2nd favorite birthday present - when I turned 30, my dear friend and her family came up from NC, just to hang out and go do fun things, etc. Well, our families when to a museum and we planned to go shopping while the guys took the kidlets home. Well, unbeknownst to me, they had this huge party planned so when my friend and I got back from shopping and lunch (after our long day at the museum, LOL) I had a HOUSE FULL of people and it was decorated and everything! The best birthday present I ever received was a cake from my mom when I turned 10. We had seen a gorgeous basket-weave cake with real edible sugar flowers in the Martha Stewart magazine several months before. My mom remembered how much I had liked it, and made the cake for me. Even though it rained on my party at the park, I was glowing with happiness over that cake. That's one of my favorite memories of my mom.

My best birthday was probably my 17th which was actually only a couple years ago! Somehow the days worked out so that I graduated from high school on my birthday. Not only was it thrilling and exciting to graduate high school, but it was so nice to see all of my extended family and friends together. Also I got double presents which was pretty sweet :)

Best birthday gift is the one I am getting ready to receive...I am celebrating my birthday with my church having everyone from the community/church come together for a night of fabulous music/espresso/cake with local artists...what is so cool is instead of the normal $5.00 cover charge, attendees have to bring cans of food for our food ministry pantry to feed our neighbors who are struggling to feed their families. I am providing the cake(s)to sweeten the night, and using my designated birthday as the 'draw'...ability to help others is the greatest gift one can give/receive.

I was trying to think of my best birthday present ever, and maybe it's just too early in the morning, but nothing was standing out in my memory as super awesome in a write-about-it kind of way. However, the best birthday present I've ever given was last year, to my husband. We were trying to get pregnant, and the time I was going to be able to find out was right around his birthday. I'd been getting up at 5am to do those pee-stick pregnancy tests in secret for a week (and sneaking out to hide the tests in the garbage each morning), and finally on the DAY of his birthday I got a positive! (I had spent over a hundred dollars on pregnancy and ovulation tests already, because I'm neurotic like that). Anyways, he loves to see hats on babies, and he crochets, so I had bought him a book of baby hats a month or so ahead of time. On the inside of the cover I printed out a photo of the positive pregnancy test. I couldn't wait to give it to him, so I woke him up at 6am to unwrap the present. It took him a couple of minutes to figure out what was going on- he thought the photo of the pregnancy test was part of the book, and when he finally "got it" we had a big ole' jumping-on-the-bed-and crying party. Our little girl Olive just turned 9 months old two days ago :) I think he'd agree that she was the best birthday present ever!

Doesnt sound like much, but it was the first time my 7 year old (at the time) daughter had my mom pick her up and take her to the store and shop with her own money and get me what she thought would be great for my birthday. The funny part...she bought me Bossypants by Tina Fey! :)

I love the cake!! And I really want to have a Kitchen Aid, but I'm from Spain :-( (I can pay the delivery,hahaha). My best present was given by a friend. When I was a kid I always wanted to dress as a princess, but my mom never bought me a costume for Carnival. My other dream was traveling around the States with a pink Cadillac. My friend came with a pink car (it was her car with some scrap paper on it, but it was fun) and a princess dress and we took a trip around Barcelona.

My favorite birthday present was for my 7th birthday. My grandparents lived half-way across the country, and while we saw them every Christmas, I never got to spend my birthday with them. A fact that was made more difficult by the fact that my older sister always got to celebrate her birthday with them as her birthday was in early January. However, on my 7th birthday, after the grand pleasure of being able to wear a pretty dress to school for class pictures (we normally had to wear uniforms) I arrived home to the wonderful surprise of my grandparents sitting on the couch in my living room. They had come just for me and my birthday, and I was beyond ecstatic.

Bummer I totally wrote out this long response then lost it. Happy Blogiversary! I am 28 years old and I still haven't received my dream birthday present. I was with my (ex) husband for 9 years, married 7. Every single year for Christmas, birthday and anniversary I asked for the SAME THING. A Kitchen Aid Mixer. I'm seriously not even kidding. I absolutely love to bake and every time I go shopping I have to go look at all the pretty mixers. My friend has a Kitchen Aid and I'm so jealous. They look amazing. I never got my gift as they are too expensive but it didn't stop me from asking. Now I'm a single mom of 3 kids (5, 2, 7 months) and I will never be able to afford one. Blah. They even had a silver one on clearance at Meijer the other day 20% off, then I got to take an additional 25% off the clearance price...I didn't have any extra money in my budge to buy it and now it's gone *sob* Ugh it was like a huge tease!! Funny enough, I was making the batter for soft cutout sugar cookies a few days ago and my cheapo mixer I got in 2004 at my bridal shower started smelling like smoke and then just died. Haha! I'm honestly surprised it lasted me this long! So now I'm without a mixer at all and no money to buy a new one...not cool for someone with a serious sweet tooth and an addiction to baking. Agh!! Anywho, that is my dream present and always will be until I finally get one. It might not be until my babies are all grown up and I can afford one again...but mark my word, I will get one eventually! LOL.

Sappy but true. For my birthday when the 3rd baby was newborn and the other two were 2 and 5, my husband wrote me a poem for my birthday. Not a sappy poem, but one that expressed my exhausted and frustrated feelings about life at that point. A poem that made me feel like he truly understood, and it released so much of my guilt and effort to appear more happy than I was. Now THAT's a gift.

My favorite birthday present would have to be the solitaire diamond necklace my parents gave me on my 18th birthday. It's definitely one of my favorite gifts ever. (Almost tied with my favorite Christmas present ever-a special edition printing of my favorite book "Pride & Prejudice.")

The best birthday present I ever got were tickets to see John Mayer Live! It was an amazing concert and I got to bring friends! We had awesome seats just a few rows away from him!

The best birthday present I've ever received was the one I received this year. The basement of my house was completely flooded by Irene just two weeks before my birthday. Everything in the basement had to be taken to the landfill, including all of my holiday decorations and my woodworking tools. I was very upset about my losses, especially my tools. For my birthday, my boyfriend gave me a dremel for a start of rebuilding my workshop. I cried because it was so thoughtful of him to give me something as a reminder that what I had lost had been stuff, and stuff could be replaced.

Happy Birthday! Thank you for this wonderful blog! My sister told me about it and your desserts have been my favorite ever since! My favorite are the blue velvet cupcakes! The best birthday present I ever received was a Barbie cake for my sixth birthday. I wanted a cake with a picture of Barbie on it. Instead my Mom worked really hard baking a cake that she put a real Barbie inside to make it look like it's dress. Her hard work to make me a happy 6 year old was something I didn't really appreciate until I was older. I've also asked for a Kitchen Aid mixer for every holiday and birthday for the last five years and still haven't got one yet! :)

Happy blog birthday! I actually just discovered you a couple of weeks ago and I'm loving this blog so far! And this cake is beyond beautiful! I think my best present would be the sapphire necklace I got from my boyfriend for the first time we celebrated my birthday together. He wrapped that tiny necklace case in a snowblower box to start and I had to keep opening box by box until I got to it!

Hi I am so excited for this giveaway! I love your site and I have gone sprinkle crazy since I fell upon your blog:) I realized you don't have to be a kid to enjoy all the colors. Well I'm entering to say that this mixer has been on my birthday wish list for 4 years! And I couldn't need one more these days, I've been training with team in training that runs marathons for the leukemia and lymphoma society and most importantly raises money to beat this disease! To raise money I would love to bake for my fundraising, but I could only do so much with my small one that heats up way to quickly. I hope I win this mixer you would not only make my day but make my life exciting, I love to bake and I love to help others beat a disease! Best Birthday gift came from my closest friend. I Just turned 30 and was really feeling far from my free and easy days (I have a 13 month old and am 11 weeks pregnant, so much 20 something). Although marriage and motherhood are great... I really missed my beat friend and all the ridiculousness we use to do. So, she sent me a bit of it in the mail. The box came stuffed with random things from when we live together. Her thoughtfulness and attention to detail was overwhelming.
