Strawberries and Cream Crepes

I developed a love of breakfast for dinner growing up.  My mom would often make us breakfast foods for dinner and it would be my favorite meal of the week.  Crepes were introduced to my by my cousins when I was a teenager and I loved them.  Although my kids haven’t yet developed my  love for crepes, I still enjoy making them for my husband and me.  This is an easy and delicious breakfast for dinner or breakfast for breakfast recipe.

Basic Crepe Recipe

Ingredients

  • 1 cup flour
  • 1 1/2 cup milk
  • 2 eggs
  • 2 tbs sugar
  • 1 tbs cookie oil
  • 1/8 tsp salt

Instructions

In bowl, combine all ingredients with a rotary beater until blended.  Heat a lightly greased skillet on low-medium heat.  Use about 2 tbs batter for each crepe.  Our crepe batter at the center of the skillet.  Lift pan from stove and rotate slightly so batter expands into a larger circle. Let cook until the center is no longer batter.

Use whatever sounds tasty for the filling.  I often will use fruit with cool whip or my easy fruit dip recipe.  I will also use scrambled eggs as a filling.

Strawberries and Cream Crepe Filling

Place strawberries down the center of the crepe.

Place whip creme or my easy fruit dip over the top of the strawberries.

Wrap the sides of the crepe over the top of the filling.

This recipe works great as a breakfast entree or have dessert crepes and fill the crepe with something rich like chocolate or Nutella or chocolate and Nutella.  Have you had crepes?  Who else does breakfast for dinner?

    I have decided that my husband is going to make this for me for breakfast… maybe for dinner tonight too! I am a HUGE fan of strawberry crepes {anytime of day}. They have the absolute best ones I have EVER had in Seattle at Pike Place Market. TO DIE FOR!
